It’s no secret that I love getting into the kitchen and making delicious sweet treats. Whether its a batch of cupcakes, a tasty pie or my much loved lemon drizzle cake, I feel happiest when I’m baking. Aside from it relaxing me, I like to be creative and try new recipes as well as making my old favourites. One of my easiest recipes to make has been developed from a cupcake recipe using equal parts of ingredients to make the lightest, fluffiest loaf cake that you have ever tasted. Each time that I share a picture of my Lemon Drizzle on social media, I get so many people asking for the recipe so I thought it was about time that I put it into words. Enjoy!

Anoushka’s Lemon Drizzle Cake

Ingredients:

155g Self Raising Flour

155g Caster Sugar

155g butter, at room temperature. Please note that I substitute dairy butter for a non dairy soya butter as I am lactose intolerant

3 large eggs

1 tsp Baking Powder

Lemon juice. I use 2 lemons.

Mr Fitzpatricks Vintage Cordial No Added Sugar Clementine Orange and Bergamot, approx 50ml

For the Drizzle

Mr Fitzpatricks Vintage Cordial No Added Sugar Clementine Orange and Bergamot, approx 50ml mixed with 3 tbsp of caster sugar

Method:

Line a loaf tin with grease proof paper or a loaf liner like I have and start putting your dry ingredients into a mixing bowl.

Add the butter and mix until it looks like sand. Then add your eggs one at a time and mix well.

When the mix looks like a smooth batter, add in your juices and mix once more before pouring into your lined loaf tin. Pop in the oven at 180 degrees for around 35-40 minutes and your cake has a lovely moist crack.

It really is the simplest of recipes with maximum taste. Whilst the cake is cooling, mix up glaze by using the cordial and caster sugar, prick the cake with a fork then pour it over and let it sink in.

To me, my Lemon Drizzle means Sunday. A day of relaxing, movies and lots of cups of tea. It’s on a Sunday that I like to make a huge pot of tea and I’ve just received a new teapot from Sara Miller London. I can’t think of anything better than copious cups of tea from a non drip pouring teapot especially when it looks this good. A good cup of tea must be served with a good slice of cake so my lemon drizzle will go down a treat.
