Easter Rocky Road Recipe

There’s nothing that I love more than being in the kitchen and I adore spending time concocting recipes to make sweet treats and cakes. My last recipe was for my super easy chocolate rum truffles, so I couldn’t think of anything better than a quick and easy recipe for my Easter Rocky Road. It’s not quite a rocky road in that I haven’t put any biscuit pieces inside, as I have substituted these for Mini Eggs, but a recipe can always be adapted to your own taste with ingredients easily added and changed.

Ingredients:

450g white chocolate
150g Mini Marshmallows
2 bags of Mini Eggs or similar
1 packet of Party Rings
1 bag of Kinder Bueno Schoko-Bons
Edible Glitter in Pink and White

For my Easter Rocky Road Recipe, I used an oven tray as it gives the perfect depth to my creation, and lined this with greaseproof paper. In a bowl, I melted white chocolate in the microwave. White chocolate can be a bit of a mare to melt as it starts to get a strange texture if over melted. I find that if I melt for around one minute, then stir continuously until I can’t get the chocolate to melt into itself any further, then melt again for a further 30 seconds. At most it needs just two minutes in the microwave.

In the same bowl, I stirred in a whole bag of mini marshmallows and then added the mini eggs until they were evenly dispersed throughout the mixture. Once it was poured into the lined oven tray and the mixture has been smoothed out and pushed into the corners of the tray, it’s time to decorate the top. I used Party Rings and Kinder Bueno Schoko-bons and lots of edible pink and white glitter.

You can either put it in the freezer for an hour to quickly set the chocolate or leave it for a few hours in the fridge, before slicing it up and enjoying it. You should be able to get around 12 large pieces of rocky road from this recipe or more if you aren’t a greedy sod like me.

  • I am making this over Easter and taking it down to the family, they will friggin love it, well that’s if they get a look in, I’m not sure it’ll survive haha! These look amazing! The Party Rings are such an awesome touch!
